I did it!!!

Well as you know I have been on a search for the perfect blueberry muffin! Well I found a recipe called "to die for blueberry muffin". Hmmmm......maybe to die for in another sense? lol (Ok that was a bit harsh I know) These were terrible. They were dry and bland. I realize that muffins have a tendency to be dry if you aren't careful but come on! The reviews were mixed but the good reviews were GREAT reviews and truthfully there were more good than bad. So I decided to give them a try (even though I was hesitant because of the amount of vegetable oil it called for, maybe this was the problem). Needless to say I will NOT be making these again!!! (In all fairness, I will say that it is possible that I did something wrong but I really think it's just the recipe)

So on to the next recipe!!! I knew as I was mixing this that it was the one!! Everything about the batter was perfect!! I was trying not to get my hopes up before they were done but I was definitely excited. Well, I patiently waited for them to be done but once that timer went off I became a little impatient! LOL I was in a huge hurry to get these out of the pan. I did not use liners and I didn't want to wait long enough for these to cool so as I'm trying to pop them out of the pan the perfect tops came off of a few. Oh well, I'm sure I'll be more patient next time!!  Cause Oh Yes, there will be a next time!! These are the perfect muffins!!! They are as good, if not better than restaurant or bakery kinds! I was so excited!!! Now it's time to try this recipe with other flavors!! YAY!

The Great Muffin Search!!

Well, I am on this huge muffin kick lately. Who doesn't like muffins, right? Well I think my love for muffins started years ago when I lived in Memphis. Although I've always liked muffins, the blueberry muffins from Perkins are to die for...in my opinion!! Well, I think that this is the muffin I am searching for. I know that I may not find one quite this good but I can atleast try can't I? :) My muffin recipe search started with the raspberry jam muffins (see post below). They were good but not exactly what I was looking for. So I found a different recipe and started with strawberry. This is a funny story! LOL For some strange reason, lack of sleep maybe or kids distracting me, who knows, but I read that it calls for 2 1/2 TBSP of baking powder!! I remember thinking it seemed like alot but I still added it anyways. Well, as I am reading through another recipe I notice it calls for 2 TSP! I quickly go back and check and yep, sure enough it called for 2 1/2 TSP not TBSP!!! Duh!! LOL The muffins weren't terrible but were definitely not great. I also noticed that they just weren't quite sweet enough, seemed a little bland. (which could have been partly due to the excess baking powder?)

 Well so using this same recipe I add a little bit more sugar, only 2 TSP of baking powder and also added a touch of vanilla. These turned out MUCH better! I made these for a friend and unfortunately forgot to take a picture of these! :(

Today I decided to try these in Peach using the same recipe. They were very good as well!

Tomorrow I will be trying out 2 other recipes that I have found. We'll see how they are. I'm determined to find the perfect recipe! Wish me luck! :)

Sweet Raspberry Muffins

I have had this recipe for Sweet Raspberry Muffins forever it seems but just have not gotten around to making them. Finally today I gave it a try. I love anything that has a jelly or cream of any kind inside so was super excited about these! They turned out VERY good as far as flavor, the kids couldn't get enough (literally...we ran out). But I was a little disappointed in the texture. They were more like a homemade biscuit with jelly inside than a muffin. I kind of had a feeling they would be this way as I was making them because it was more of a dough than a batter. I think I will play with this recipe a little and see if I can't get the texture to be more muffin-like. But all in all I'd still say it was a success. I have been muffin recipe hunting a lot the past few days so I'm sure there will be more muffin posts to come!! Have a great evening!! :)

Happy Easter!!!

After dying Easter eggs and all of our family Easter eve fun, the kids all passed out early and amazingly easy! The Easter bunny has even already come! I hope everyone has a wonderful, blessed Easter!! 

Also, today I made a new treat, S'mores on a stick! They were delicious!!! I am adding these to my menu along with a couple of other marshmallow lollipops! Will post pics of those when I get them started! :)

 

Today's Order

25 cake balls; 5 pink birthday cake, 5 red velvet dipped in vanilla, 5 strawberry dipped in vanilla, 5 lemon dipped in vanilla, and 5 chocolate dipped in chocolate.

Practice makes perfect!!

Well yesterday turned out to be a great success. It started off a little rocky though. Yesterday I had to make the cake balls for the wedding tasting and the bouquet. I got up and got started very early, being that I was sick the 2 days before I didn't get much done...so I go to my freezers to start getting out the already rolled cake balls and I find that I have NO birthday cake left!!! Uh Oh!!! So I scoop Mady up and away we go to the nearest walmart!!! I get what I need and I come home, make the cake, pop it in the oven and start getting things ready for the dipping process. Well I start to dip the strawberry into the vanilla almond bark and neither the strawberry cake ball nor the vanilla coating was willing to cooperate!! But FINALLY I got things going smoothly! I got my bouquet done and although it's not the best lollipop bouquet I've ever seen, I was pleased with it considering it's my first one! Practice makes perfect right?! So today I am off to buy more pots and supplies and get to practicing on these....after I get my order for today done! Later it's off to the dentist with the 3 older kids!! (They can barely contain their excitement, lol) Hope you all have a wonderful day!!!!

Lots of orders!!!

Hi again! I had hoped to have a great blog about my day but unfortunately I have been sick all day! :( I have a cake ball order tomorrow for a wedding tasting and if they like them I will get quite a large order from that! I am also working on a cake ball lollipop bouquet for tomorrow! I haven't gotten near as much done as I had hoped due to being sick so I am hoping like crazy that I am feeling better in the morning cause I will have to get busy first thing!!! This will be my first lollipop bouquet so I hope it turns out as planned. I also got a call today about an order for 75 cake balls for a daughter's graduation party. I have only been working on these for a little over a week and already it seems to be taking off. I'm so excited about it! One girl says that she has a 4th of July party every year and this year she wants 300 cake balls!! And Emilee's teacher is having a baby in June and wants me to make "It's a boy!" lollipops for the hospital when he is born! How neat! So if the orders keep coming in like this I will soon be a busy (or busier) mommy!!! Yay!!
